Chelsea Market asks for none: a block-long market hall you walk through, grazing counter to counter — tacos, oysters, noodles, gelato. Hole In The Wall – FiDi is the same idea in café form near the Seaport: no reservations, a moving line, brunch as long as the conversation. At the far end are the rooms you build an evening around: Le Bernardin, where seafood is a tasting ceremony and a jacket is the norm, and Manhatta, whose set menu comes with the harbor and the bridges.
The rest sort by mood. La Grande Boucherie and Pastis are the big brasseries — one under an antique skylight near the Broadway theaters, the other amber-lit with tables outside in Meatpacking. Au Cheval and Minetta Tavern deal in dim leather booths and a serious burger, each with a walk-in bar when the dining room is full. Petite Boucherie is the same French idea shrunk to a West Village corner; Anytime Kitchen is the outlier, with Korean stew pots up a Koreatown staircase for nights that start near midnight.

By occasion. A big group fits easiest into La Grande Boucherie, with private rooms and mezzanines, and Anytime Kitchen, where the shared pots are built for eight — book, the waiting corridor is tiny. With children, Chelsea Market wins: walk-through, and everyone picks their own counter. Outdoors: the glass-roofed arcade at La Grande Boucherie, heated year-round, plus tables outside at Pastis, Petite Boucherie and Hole In The Wall. Late means Minetta Tavern, with Supper past midnight nightly, then the walk-in bar under Au Cheval.
Honestly about the edges. This is Manhattan top to bottom: no Brooklyn, Queens or the Bronx, and the map stays between the Financial District and Midtown. French cooking takes three rooms and a fourth through Minetta Tavern; Anytime Kitchen is the only Asian kitchen, Italian, Japanese and Chinese are missing, and Mexico is only a taco counter in Chelsea Market. Nobody works around the clock, only three places open early, and nowhere here has live music.
