Au Cheval — A Hidden Alley, a Velvet Glow, and New York’s Most Hyped Burger

Half the pleasure of Au Cheval is telling someone how to find it: down a graffiti-lined alley in Tribeca, past no visible sign, toward a doorway that leaks golden light and the smell of griddled beef. Inside waits the New York edition of Chicago’s most famous burger — and a room that feels more like a members’ club than a diner.

The Story

Brendan Sodikoff’s Hogsalt group opened the original Au Cheval in Chicago in 2012, and once Bon Appétit mused that its burger might be America’s best, the lines never stopped. The New York outpost landed in 2019 and instantly joined the city’s bucket lists — a “diner” where the booths are tufted leather, the lights are set to permanent midnight, and the burger arrives with a steak knife through its heart.

What to Order

The double cheeseburger with bacon and a fried egg is the full ceremonial order — molten cheddar, dijonnaise, pickles, a bun gone glossy at the edges. Beyond it, the fried bologna sandwich is the connoisseur’s flex, General Jane’s honey-fried chicken brings sweet heat, and the fries under mornay sauce are engineered for sharing and rarely shared. Brunch adds steak and eggs and chilaquiles; the chocolate cream pie is the correct ending, ideally with two forks.

The Space

A dim, handsome room of dark wood, leather and brass, with a zinc bar and an open kitchen as the stage. It hums rather than roars — dates lean in, groups settle deep into booths, solo eaters take bar stools with a burger and a bourbon. Downstairs, The Bar is the speakeasy-flavoured annex: walk-in only, darker still, full menu, excellent cocktails, and the best waiting room in Tribeca.

Who It’s For

Food-obsessed visitors ticking off a legend, couples who like their date nights dim and carnivorous, groups of friends turning a burger into an evening, and night owls grazing late with a cocktail.

Good to Know

How do I actually find it? Look for the alley between Tribeca’s cast-iron blocks — follow the queue and the warm light; missing it the first time is a rite of passage.

Can I book a table? Yes, the dining room takes reservations now — snap them up early; The Bar below is walk-in.

What if there’s a wait? Head downstairs — cocktails, the full menu and a moodier vibe make the wait part of the night.

Is it date-appropriate? Surprisingly yes — candle-level lighting and leather booths do a lot of work for a burger joint.
